Water is the most important nutrient. It’s required for numerous body processes and makes up 60% of the body.

Eating a well-rounded diet of nutrient dense, whole foods, that are properly prepared and well digested, will set you up for health!

Chicken Sate`

Thai peanut butter chicken is what is on the grill this month! Known as Sate`, it makes a wonderful meal or appetizer. I have to tell you about the day I made this so I could photograph it.  Our dog Sequoia recently had TPLO surgery (Basically a CCL tear in a human, they cut the leg bone, reangle it and put metal plates on to hold the bone together).  She cannot be left alone at all at this point.  No idea what I was thinking, but this morning after walking her, I left the front door open?! Ah well, we have a few flies in the house now… I put my underwear on inside out after my shower too!  I needed a few ingredients for the sauces, so told my husband when he got home from work, I would run to the store.  I went to start my car and the battery was dead…  Called my mechanic who said if I could get it there, he could fix it tomorrow.  Well, tomorrow is the day Sequoia’s stitches come out and I have to drive an hour to the surgeons!  My husband was able to jump start the car, I drove to Auto Zone, and they nicely took the old battery out and new one I had bought in!  Off to the store, where I remembered the ingredients for the sauces, but forgot to stop at the farm stand for veggies… By the time I got home, it was dinner time, so I dug through my freezer and found some “Feel Good Foods” brand vegetable egg rolls to use as a side for this meal!  (They are not perfect ingredients, but about as close as you can get in a prepared food).  So now you know, I am totally human, and crazy things happen to us all!  Dinner was delicious!

 

Chicken Sate`
Makes 8 servings
 
Ingredients:
2-1/2 pounds of chicken breasts cut into thin long strips
Marinade:
¼ cup natural peanut butter
1-1/2 tsp. coriander
½ tsp. cayenne
1 tsp. cumin
½ tsp. pepper
2 Tbsp. sherry (or white wine or water)
1-1/2 Tbsp. lemon juice
2 tsp. honey
3 Tbsp. coconut aminos (or soy sauce)
3 scallions, chopped
1 clove of garlic, minced
 
Instructions:
Mix all of the marinade ingredients together.  Add the sliced chicken breasts cover, and marinade overnight.
 
Skewer the chicken on metal or wooden skewers (soak the wooden ones a half hour before using) and grill them 5-10 minutes until cooked through.  Serve with the Thai cucumber sauce and/or the Thai peanut butter sauce for dipping or drizzling over the chicken
 
Thai Cucumber Sauce
Makes 4 servings
Ingredients:
1 cucumber, partially peeled
1/4 cup peanuts, chopped
2 green onions, sliced thinly on a bias
1/4 cup rice wine vinegar
1 tbs. sugar
1/4 tsp. red pepper
1 Tbsp. sesame oil
1/2 tsp. salt
 
Instructions
1. Cut cucumbers into thin rounds and then slice into half and then quarter-moons. Place in bowl or serving dish.
2. Top with sliced green onions and chopped peanuts.
3. In a small bowl, combine the remaining ingredients and pour over the top of the cucumbers.
 
Let sit for 5 minutes and serve. Leftovers can be kept in the fridge.
 
Thai Peanut Butter Sauce
Makes 4 servings
 
Ingredients:
1/2 tsp. garlic, minced
4 Tbsp. natural creamy peanut butter
1/2 tsp. hot salsa or 1/8 tsp cayenne pepper, to taste
1/2 tsp. curry powder
3 Tbsp. lime juice

Mix the ingredients well and serve for dipping or drizzling over the chicken.

There are too many people counting calories and not enough people counting chemicals

Chemicals and sugars are added to just about everything boxed, canned, or bagged, BUT chemicals and drugs are also added to what should be NATURAL products. KNOW what is in your foods and know health!
