Undigested fats rancidify in the stomach and weaken the mucosal lining of the stomach. Once that mucosal lining is damaged or weakened, undigested fats and proteins pass through the damaged lining in inappropriately large sizes. This in turn, overruns the immune system.
These nourishing undigested fats and proteins are now assaulting the immune system. This is called a Permeable Gut Lining or Leaky Gut Syndrome, as the damaged gut lining allows fats and proteins that are not fully digested to leave the stomach through the damaged mucosal lining and into your body. The immune system views the undigested fats and proteins as one more assault that needs to be fought.
The most common proteins causing this in Hashimotos? Gluten and Casein are two of the molecular mimicries of thyroid. After Leaky Gut has begun BY gluten, leaking out the gluten and the Casein proteins and triggering T cells to form and clone themselves. Therefore, many people with Hashimotos see their antibody numbers go down when removing dairy and gluten from their diets.
Molecular Mimicry
An unexpected cross-reaction of the antibodies with autologous components may occur. This process is in fact at the basis of the progression of autoimmune diseases and is called molecular mimicry. In the gut, inflammatory pathologies that are related to dysbiosis associated with various factors, such as genetic factors and food, cause alterations of the immune system characterized in IBD and CD (9, 10, 14). Those enteric eco-events induce systemic inflammatory responses, leading to the systemic manifestations of IBD and/or CD, affecting remote organs including the thyroid (10, 14).” (Gut-thyroid axis and celiac disease; Aaron Lerner, Patricia Jeremias, and Torsten Matthias, May 2017)
Repairing Leaky Gut and avoiding food sensitivities while doing that can be very helpful in reducing antibodies, absorbing nutrients and having more energy! The goal in food sensitivities is healing the gut enough to be able to ADD those foods back in again. The exception to this is those that carry the genes for Celiac, I would NOT suggest adding gluten back in at all. There is too much risk of turning on the Celiac gene with Leaky Gut.

This month’s recipe is 6 Flavor Chicken
I have adapted this recipe from the childhood version my Mother made that used sugar and replaced the sugar with honey. However, it tastes delicious with no honey as well, for those of you who have Insulin Resistance or Diabetes.
6 Flavor Chicken
Serves 4
Ingredients
½ tsp cinnamon
2 cloves garlic, minced
1 heaping Tbsp. fresh ginger grated
1 cup coconut aminos (It is gluten free, and I use this in place of soy sauce)
1 Tbsp. honey
1 chicken cut up or 4 chicken breast, thighs, etc.
Directions
Mix all of the ingredients together in a bowl (I use a large Pyrex container and lid), place chicken pieces in the marinade, refrigerate overnight, turning at least once. Grill the chicken until done and enjoy! I served this with grilled pineapple, green beans from our garden, squash and zucchini from our garden that I sautéed in bacon fat with Vidalia onion, garlic, salt, pepper and the juice from the pineapple.
