Healthy fatty acid deficiency is epidemic.

Fats are building blocks for every cell membrane in the body.
The book “The Big Fat Surprise” by Nina Teicholz is a fantastic one to read about why everything you THOUGHT you knew about fats is WRONG! What if the low-fat diet was the CAUSE of the epidemic of obesity, diabetes, autoimmune diseases and low or imbalanced hormones?! It is a long and scientific read for those of you who enjoy that. I will give a bit of an overview on what it talks about below.
The low-fat diet, and the use of vegetable oils (trans fats, hydrogenated fats and polyunsaturated oils) instead, that have been the paradigm for the entire USA (men, women and children) since the 1950’s, is based on poor science. Science that was altered, and frightening results, ignored.
The first studies on cholesterol and saturated fats, were on total cholesterol levels (HDL and LDL cholesterol had not yet been discovered). They also were done on animals, and they did not take steps to stop oxidation, when cholesterol is oxidized, it is more likely to turn into plaque. It was Ancel Keys whose studies that began in the 1950’s who declared, very loudly (think, squeaky wheel gets the oil) that saturated fats, from animals, were causing high total cholesterol levels in middle aged men and they were dying of heart attacks due to this. His first study was the “Diet Heart Hypothesis”.
The study that Ancel Keys did in the early 1950’s was lacking details, like how many men were involved, and how long the specific diet was fed. He also felt that the weight of a man or if a man smoked, had nothing to do with heart disease, which were later proved to be of huge concern.
In 1957 and 1958 Keys claimed in 20 papers he published in top medical journals, that total serum cholesterol, could be lowered by cutting back saturated fats (from animals). Remember, they are only measuring total cholesterol in these studies, and only studying men.
Other scientists globally objected, pointing out that countries known for eating high levels of saturated fats (France, Switzerland, West Germany, Sweden, Norway, Denmark) had low levels of middle-aged men having heart attacks. Keys was studying Europe just after World War II, when foods were scarce and people had not been eating well or much for years.
From 1958-1964 Keys did his Seven Country study in Italy, Greece, Yugoslavia, Finland, Netherlands, Japan and the USA. He chose countries likely to confirm his previous studies, instead of countries like France or Switzerland which would challenge his previous studies. The Mediterranean countries were still recuperating from World War II; therefore, they were still in poverty. Italy was coming out of 25 years of a Fascist government and in poverty. The Greeks were tested during Lent, a time that they were fasting, which meant no foods from animals. The Mediterranean Diet came from this study being done! A time when the people studied happened to not being eating animal foods, yet normally they not only eat animal foods, they eat quite a bit of red meat!
Other scientists again continued to study, sugar was coming up as a possible cause of heart disease, as was weight, smoking, lack of exercise and high blood pressure, but saturated fats were NOT showing to be a cause.
The squeaky wheel Keys was busy writing essentially blacklisting those scientists, claiming they were incorrect, and he was correct.
Even more frightening is that the American Heart Association (AHA) was receiving massive funds from Proctor and Gamble, one of the Big Food Manufacturer giants. In 1941 General Foods, Quaker Oats, Heinz, the National Biscuit Company, and the Corn Products Refining Corporation formed the Nutrition Foundation, a foundation that worked to influence opinions and scientific conferences and studies by FUNDING them. They benefitted immensely with the heavily carb loaded foods that were being recommended (cereals, breads, crackers, and chips), polyunsaturated fats that were also being recommended, were in all of their foods. So, these very biased companies, were funding research and conferences that would be telling us how we should be eating…
In 1992, over 30 years after the Framingham study was done, one of the researchers revealed that the more saturated fats the men in the Framingham study ate, the lower their serum cholesterol was. No relationship to saturated fats and heart disease was found. What was found in this study was, that men with low cholesterol (under 190) were three times more likely to end up with colon cancer then men who had cholesterol levels over 220. In 1968, corn oil was shown to double the rate of tumor growth in rats. Lower cholesterol levels have also shown a higher rate of gallstones.
However, there was so much money invested in proving the Diet Heart Hypothesis, the US government was not going to entertain any dissenting studies, or even the pieces of studies that proved that polyunsaturated fats (vegetable oils) caused higher death rates and cancer.
Beginning in the 1970’s, Congress became involved and began to become involved in telling the American people they should be eating low fat to not risk heart disease, based on ideas that had never been properly tested. They called this “Dietary Goals”. This included women and children, when most of the studies had been down on middle aged men. Once the Government was involved, there was no turning back…. None of these congressmen had any experience in reading scientific data, and based their decisions on that squeaky wheel Ancel Keys, who was being VERY forceful with his “studies” and what he thought lined up with his Diet Heart Hypothesis, conveniently omitting what did not line up.
Here Congress decided what we should be eating, yet the scientists were still not in agreement on what the components of healthy diet actually were!
The National Academy of Sciences was created by Congress in 1863, they were to be a means that congress could use for scientific matters that were beyond what they knew. In 1940 the National Academy of Sciences formed the Food and Nutrition Board. This board had been requested by the USDA to write a review of the “Dietary Goals” that Congress wanted to pass. Somehow, the contract was never signed, and somebody cancelled the request! The academy went ahead and funded its own study on the diet/heart evidence. They felt that a fat reduced diet should NOT be recommended to all of the American people. Their reasoning, heart disease is increased by high carbohydrate diets, polyunsaturated oils increase the risk of cancer and children would not have adequate nutrition on a low-fat diet. In 1980, the House and Senate decided to pass the “Dietary Goals”.
The purpose of the Academy was to provide checks and balances on all the nutrition work of others, and it failed.
So now all Americans, from 2 years old, male, and female, are advised to eat a low-fat diet, avoid saturated fats, and to use hydrogenated and polyunsaturated oils.
Pediatricians fought back, unsuccessfully. Low-fat diets in children cause failure to thrive, polyunsaturated oils are put in baby formulas (remember these raise the risk for cancer), it causes nutritional dwarfing, insufficient weight gain and late onset puberty. Children eating a low-fat diet are getting less Vitamin B-1, B-12, E, thiamin, riboflavin and niacin.
In 2001 the international group that commissions experts to do objective reviews, the Cochrane Collaboration, concluded that avoiding fat did not prevent heart disease in children, nor did it help them to lose weight.
Women have barely been studied in all of this low fat diet that was “prescribed” for all Americans. In fact, women respond differently to fat and cholesterol then men do. The Framingham study did include some women. In this study it showed that women over 50 showed no relation to between total serum cholesterol and heart disease. Because it is rare for women to suffer from heart disease before age 50, this result shows that women were needlessly cutting their saturated fat intake and adding in hydrogenated oils instead, putting them at a greater risk of cancer and gaining no benefits. There are also no findings that saturated fat has anything to do with breast cancer.
In the early 2000’s more studies were done showing that trans fats in junk foods, were actually causing heart disease. There is some question as to whether it the trans-fats or the carbohydrates. These studies had the Danish government ban trans-fats in foods over 2% in 2003. In 2006 the FDA mandated that that trans-fats be listed on nutrition facts labels on packaged foods. Unfortunately, due to the way the rules are written, many food companies reduced the serving size in order to fall under the 0.5 gram limit, and be able to list trans-fats as zero grams…
So instead of going back to saturated fats, beef tallow, butter, lard etc., that had been proven safe, yet the publicity on them so bad over the years, scientists at edible oil companies began looking for a new fat they could use within their laboratories. They discovered interesterification. This works by changing the order of the fatty-acids chain. This makes many new triglycerides, of which studies have not been done to know if they are safe. By 2007 almost 90% of sunflower crops were a new breed of seed, bred to be high in oleic fatty acid, that could be used to fry with due to its stability. Vegetable oils when heated cause toxic oxidative products like aldehyde that interferes with DNA and formaldehyde, often used to preserve body parts. Do you really want to be ingesting this?! We KNOW THESE NEWER OILS ARE NOT SAFE!!!!
Fats have been replaced with refined carbohydrates in the 20th century. History tells us that we used to eat meat, milk, eggs, and cheese, some vegetables and very little in the way of carbohydrates. History also tells us that heart disease is a more recent problem, as are various forms of cancer, autoimmune disease, diabetes, and hormone imbalances. You do the math, and please eat saturated fats and full fat foods!
This months recipe is Beef Bourguignon
Tried and true this never disappoints me!
Serves 4
Ingredients
4 slices of thick cut bacon, cut into bite size pieces
1 pound stew meat (chuck or rump roast cut into cubes)
Salt and pepper to taste
3 Tbsp. flour (I use Pamela’s Pancake and Baking mix, gluten free and non GMO)
1 cup of sliced carrots (I use purple, orange, and yellow ones)
1 medium onion, chopped
2 garlic cloves, minced
About 2 cups of Burgundy (enough to cover the beef and vegetables)
1/3 cup Cognac
Pre-heat your oven to 350 degrees
Start cooking the cut-up bacon in a Dutch oven on the stove, when it is almost all cooked, add the stew meat and brown it.
Once browned, add the flour, and stir up to coat.
Add the carrots, onions, garlic, salt, and pepper and mix up.
Add the burgundy and cognac, bring to a boil, cover and put in 350-degree oven for 3 hours
This can be served with boiled potatoes, noodles, zoodles, whatever your heart desires! I used small red, purple, and white potatoes on this night (I smothered them in butter to eat!) and served with a fresh garden salad, delicious!
They have it all wrong, and the statistics of obesity and Diabetes are STAGGERING! If you want to be healthy, step away from nutrition guidelines, food pyramids and “My Plate” guidance from the US government.
