I thought this month I would talk about what it is exactly that I do! How working with me might look for you!
I am a Nutritional Therapy Practitioner, an HTMA Practitioner and now also an Autoimmune Paleo Certified Coach (AIP Certified Coach).
Most of my clients have chosen to do the Nutritional Therapy packages, with and without seeing the Doctor that I work with that prescribes. I offer AIP coaching in my Nutritional Therapy packages.
I will walk you through what a 3-month Nutritional Therapy package with me might look like. Sometimes the fear of the unknown can hold you back from reaching out for help, I hope this removes those fears!

After choosing your package and paying on my website, I will email you paperwork with a due date to get it back to me. Our first appointment will be scheduled about 2 weeks after I send you the paperwork.
Paperwork (all are fillable forms, meaning you can fill them out right on your computer, save and email them back to me):
1. If doing a payment plan, there will be a contract to sign stating that you will pay on the specified day monthly.
2. A Disclaimer
3. If working with the Doctor too, there is an authorization form so that we can share your information between ourselves about your health concerns.

5. Three days of Food and Mood Journals
6. A Nutritional Assessment Questionnaire (NAQ)
So, some totally boring paperwork, but some here you may be unfamiliar with and those are what will help me to help you!
The Initial Interview Questionnaire – 7 pages (this is only for our first appointment)
This has your basic contact information as well as:
Background information (where you were born, raised, birthdate, height, weight, occupation, relationship status, children etc.). It also has you list your hobbies, goals, and health concerns. It will also ask about your sleep habits, food and drink consumed. It goes through a fairly detailed history of you and of your family
This is what the first page might look like, and how I then mark it up with comments to help guide me in how to help you as well as questions I may have for you.

Food and Mood Journals (These are done for EVERY appointment)
Generally, I only need 3 days of typical food and moods for you as well as movement, relaxation and supplements and medications you may be taking. This shows me a TON of information!!! What you are eating and drinking and how your body and mind react to those. I will also provide you with detailed instructions on what I am looking for. This pretend client Sally Sweettooth did not fully do as instructed, so is missing food quality that was asked for in the notes made on that entry. This is what a day in a Food and Mood Journal might look like:
The Nutritional Assessment Questionnaire (NAQ) (This is done at the first appointment and also for the last appointment in the package). So much information I can glean from this multiple-choice questionnaire that is all about YOU! You see, this questionnaire covers symptoms you have, these symptoms go with specific known issues. This is one page of the NAQ answered:
From here, I print out a severity report, all Severe and Moderates I will make notes on each thing that may be lacking nutritionally and what it is causing. Beginning to analyze what exactly is going on for you individually.
The paperwork I share from here on out, is an actual client I had.
Then I will print out the Symptom Burden Report and find the top 10 conditions that are a problem. Your body is designed to detox on its own. If your symptom burden is high, your detox pathways are not functioning as they should, allowing toxins to remain in your body and cause issues.
Those top 10 conditions will correlate with your top 10 nutritional deficiencies. Protein need does not necessarily mean you do not eat enough protein, more often, it means you are not able to digest it properly.
Now I will make and print the graph that shows what is going on! Ideally, we would want everything in the bottom section, low priority. I have never seen that, nor do I expect to see that at a first appointment. Nobody has ever come to me for help because they felt great!
From here I lay out a plan of action with dietary changes, lifestyle changes, as well as some supplements in most cases. We can only derive nutrients from the best foods if we can properly digest them! In this graph above, we see that ALL digestion is a high priority. Her minerals are not horrid. Her Fatty Acid needs, and sugar handling and vitamin needs are a high priority. We also see that as a result of all of those priorities on the right of the red line, that consequently, she has issues in adrenals, pituitary, thyroid, female reproduction, cardiovascular, and her immune system.
This client did all that I had suggested to her, and only 2 months later, her NAQ graph looked like this:
I suggested we do her NAQ again before the last appointment, because almost every symptom she had was gone. She was thriving in her life and living it the way SHE wanted to, not the way her symptoms said she had to. So, in a fairly short amount of time, it truly is possible to resolve many issues, create a healthier lifestyle and healthier food choices. I have openings, and am taking new clients, let me help you thrive in your life too!

This months recipe is AIP Friendly Strawberry Shortcake Bites! Just in time for strawberry season 😊
Strawberry Shortcake Bites

Serves: 6 bites
INGREDIENTS
For the biscuits:
120 grams cassava flour
3 tablespoons coconut sugar
½ teaspoon baking soda
¼ teaspoon sea salt
¼ cup palm shortening
½ cup coconut milk
1 tablespoon lemon juice
½ teaspoon vanilla
For the cream:
1 14-ounce can creamy coconut milk (I prefer Arroy-D), refrigerated for at least 3 days
1 tablespoon maple syrup
Fresh strawberries
½ teaspoon vanilla
INSTRUCTIONS
First, make the shortcake bites. Preheat the oven to 450 degrees F and line a baking sheet with parchment paper.
Combine the cassava flour, coconut sugar, baking soda, and salt in a medium bowl and stir to combine. Add the shortening and cut into the flour mixture with a pastry cutter, until pea-sized granules form. Do not over mix. Set aside.
Combine the coconut milk, lemon juice, and vanilla in a small bowl and whisk to combine. Add to the flour mixture and stir with a wooden spoon until just barely combined; mixture will be slightly crumbly.
Transfer to a lightly floured countertop or cutting board and form gently into a large ball using your hands. Do not work the dough. Use a floured rolling pin to roll into a 2-inch-thick puck. Use a floured biscuit-cutter or the opening of a small mason jar to cut one or two bites out of the dough. Press down only, don’t turn your cutter. Transfer to the baking sheet, gently rework the dough, and continue until you have no more dough left (you should make about six 2-inch-thick biscuits).
Cook for 14 minutes, or until lightly browned. When finished, transfer to a wire rack to cool fully.
When the biscuits are fully cool and you are ready to serve, make the cream. Open your can of coconut milk and carefully scoop only the firm creamy top layer into a medium bowl (it should be about ½ of the can of coconut milk if you use a brand like Arroy-D). Add the vanilla and maple syrup. Mix with a handheld mixer for 5 minutes, or until the cream develops some texture. (Note: coconut cream is notoriously fussy – make sure to use a truly creamy brand of milk, ensure it has sat undisturbed in the refrigerator for at least 3 days, and make sure all of your tools are cold when making this cream).
Serve shortcake bites with a dollop of cream and fresh strawberries on top.
NOTES: Making coconut cream can be fussy as not all store bought brands of coconut milk have the same thickness or consistency. I always recommend the brand Arroy-D for this recipe as it yields the best results. This can be found on Amazon.
Lastly, make sure your biscuits are fully cooled before topping with cream and berries. Coconut is notoriously temperature-sensitive, so it will melt if you try and top something warm. Plus, the biscuits develop the best texture after they have cooled.
